coconut chocolate bran muffin (amazing!!)
These are light and fluffy and so worth making! i'd put them higher up in the oven and not on the bottom rack...at 350 degrees for about 15 min...check after 10 depending on your oven.
Makes 18 muffins: Cal: 120, Carbs 16, Fat 4, Protein 6
1.5 cups of wheat bran
1/2 cup of coconut flour
1/2 cup of oat flour
1/2 cup of shredded coconut
2 scoops of vanilla protein powder
1/4 cup of sliced almonds and walnuts
1 to 1 1/2 cups of unweetened vanilla almond milk- might need more or less depending on thickness of batter.
1 tablespoon of vanilla
3 eggs
1 cup of unsweetened applesauce
1/4 cup of semi sweet chocolate chips
1/4 cup of honey
1 tsp baking powder
1 tsp baking soda
2 tbsp of coconut oil or canola oil
i mixed the wet and dry ingredients separately and then folded them in. the recipe is simple to make and can easily be converted to vegan if you switch the chocolate chips to dairy free and switch the honey to brown rice syrup. I like them heated up with a bit of butter. Goes great with a protein smoothie for post work out or for breakfast. hope it goes well!
