Choosing activity level...

What if I work at a desk all day (40 hours/week) but work out 5 hours/week at the gym and stay semi busy when at home or out and about?

    As far as I know activity level is your daily activities without working out. Then it can calculate what you would need to lose weight even if not exercising. When you do work out, those calories are added to you daily allotment. Correct me if I'm wrong anyone!

    But what if I wasn't on MFP and the site didn't automatically do that? I'm guessing between lightly active-moderately active.. idk though

    You really have a choice to choose a higher activity level and not count your exercise or choose sedentary and log your exercise calories. I've chosen the latter because I never know how much I'm going to be working out any one day. My running schedule varies as I have races coming up or not.

    Sounds right to me, which is another reason we should be eating back at least some of our exercise calories.
    I set mine at whatever level had "teacher" listed next to it because I am up and down and in almost constant motion all day. That allowed me a mere 1200 calories a day, which doesn't mesh well with running 25 miles a week!
