Vegetarian Cookbooks

I have noticed my lack of vegetable based dishes and am wanting to add a few vegetarian cookbooks to my shelf. The thing is that I am allergic to soy and to all nuts, so I am looking for books that don't rely heavily on these in a lot of the recipes.
Does anyone have any good cookbooks that they would recommend that have a large variety of foods without being strongly dependent on the use of soy or nuts in the recipes?

I second the Mark Bittman "How to Cook Everything Vegetarian" recommendation and would add any of the Moosewood cookbooks - I especially love the "Moosewood Restaurant New Classics". Both of these have lots and lots of recipes that do not include soy or nuts.0

You can also check the magazine Vegeterian Times. Also check online Veg Web helpful free site. Love it. I made Lentil loaf this week made enough for a few meals plus lunches.0

Depends on what kind of vegetarian you are....you can get a lot of good recipes online for free

I don't know if you can get it in your country (not sure where you are) but I love River Cottage Veg by Hugh Fearnley-Whittingstall. It's not really 'vegetarian' even though all the recipes are, it's written by a omnivore and the recipes are simply wonderful and work every time. And no there's no mock meat sorta things in there. There is nuts, but I don't think there is ANY soya.

add to the Hugh F-W book Ottolenghi's 'Plenty' and that should help increase your vegetable dishes.
You could also look at tapas-based books.0
