I'm getting bored of eating the same things. Lunch is getting really boring, so I was wondering what you are all having for lunch today?

I have spicy butternut squash soup - homemade - with a wholemeal pitta bread. Works out at 229 cal.

Salmon, carrots, an orange, some green lentils.0

Greek salad with turkey0

I made a veggie beef stew without the beef (its too spendy lol)
1/2 a head of cauliflower
1 small head of broccoli (both of these are all cut up just into florets)
1 green pepper diced
1/2 large onion
1/2 small head of cabbage (diced up)
1/2 large sweet potato diced
1 medium potato diced
1 can beef broth (reduced sodium)
1 can chicken broth (reduced sodium)
1 package of beef stew mix seasoning
optional:
1 cup carrots
1 cup diced green beans
2 med tomatoes
Boil the larger veggies first in separate pots (makes it easier in the end)
Broccoli and cauliflower in one
potatoes in the other
cook till tender
drain
In one of the pots add some olive oil and toss in the onions, peppers and cabbage
(the remaining veggies that you want to add as extra can go in now too)
then add your cooked veggies
add the broths and the stew seasoning and cook for about 15 minutes until thick
you can eat it like this or with wheat egg noodles which is wonderful!
each serving is about 90 calories and it is sooooo filling!
i take two cups to work and im stuffed even without noodles!

Veggie (onion, mixed bell peppers, mushroom, cherry tomato) tuna egg scramble with half a tsp wholegrain mustard a twist of black pepper and sea salt. Very tasty and Very filling. I often have this sort of mix, frequently with a little cheese and ham, chicken, sausage etc in place of the tuna.0

80% lean ground beef cooked in coconut oil with sauteed garlic, spinach, olives, and tomato!0

I've prepared quinoa salad to eat for lunch today: it has boiled quinoa, a bell pepper, avocado, beet and tahini.0

Leftovers of last nights sauteed veg (green beans, courgette, mushroom, spinach and some chorizo). I've added a few crumbles of gouda cheese so that when I heat it in the microwave it'll be lovely and melty.0

Turkey sandwich on bread thins with a laughing cow wedge mixed w/some cranberry sauce, lettuces, tomato, and onion. Perhaps some spicy tomato soup as well. Though both the soup and the turkey are high in sodium so perhaps not.0

I had a cup of butternut squash soup, a slice of whole wheat toast and a kale salad with carrots, tomato, red pepper, cucumbers, raisins, craisins and roasted red pepper dressing. Water to drink.0

I had a 2 egg omelette with 1 tbsp. onion, 1 tbsp. green pepper, Mrs. Dash, 1 Laughing Cow Light Herb & Garlic & 1 serving (15 slices) of turkey pepperoni. YUMMY!0
