I've seen mention of a few recipes for a cheesecake where the topping is made with quark and low calorie Jelly (Jello for those the other side of the atlantic). However, can't find anything definitive so far on how to do it - how much water to use with the Jelly crystsals, for a start.

Also have to find something to use for the base that's reasonably low calorie.
Going to have a nose through the 'per 100g' nutrition in the biscuit isle, but I think low fat hob nobs might be a good bet. Then going to see if this weight watchers spread which is silly-low-cal for a fake margarine can hold it together and not taste TOO bad.

I'd be stuck on the low fat base, I think it works best with good old digestives.

I have also attempted a few times to make a super quick lower cal/fat cheesecake-style dessert "pot" as opposed to a large, sliceable cheesecake....it worked fairly well, taste-wise but it didnt include quark or jelly.

It was simply a pot of Weightwatchers strawberry-vanilla whirl (frozen dessert) on a digestivey base. It's not packed full of fruits, mind so probably not the most nutritious of treats.

I'd certainly give it a try with quark though (and possibly jelly) next time I make it.

Base: digestive biscuit (1.5 per portion, to keep it lighter) + 1/2tsp melted butter + tiny pinch salt + 1/2tsp golden syrup, all crushed together and stuffed to the bottom of pot or indivudual bowl.

Cheesecake bit: WW iced dessert pot, flavour of choice (or even half a pot to cut out 6g of sugar) + 20g quark whipped together + dollop on top of the biscuit base + use 1/2 a ready made sugar-free pot of jelly to top it off with + some deforsted frozen blueberries.

Totals around 264 cals 33carbs 11fat 5protein 23sugar (17g if you used half a WW frozen dessert or 10g if you omit the iced dessert altogether and use an alternative sweetener/flavour) per serving.

Farburnfred: ta, had already seen that in my googlings. Trying to get a bit lower calories ideally.

I do like some of the frozen WW deserts, very good taste/size per calorie ratio :).

I tried a quick test with a sachet of jelly made up with around half a pint of water - ended up using 450g of quark. Whisked it up, but still too sloppy really.
Did make a nice mousse style desert - needed to whisk it again when it was a little more set.

Much less water next time to go with the jelly - think I'll add some egg whites next time too - maybe some yoghurt.

After a quick climb (£3 for the last hour), I stopped in at Asda and got some ingredients.
    Through them together.

250g of Quark + 1 sachet of jelly powder made up with a little water.
    All mixed up.

Stop right there - this is delicious; high in protein, low in carbs and 0 fat I think.
I ate about half the mixture at this point. You really need more water to properly disolve the jelly, but even this worked out well as you got fruity lumps.

To the other half of the mixture I added 100ml no fat greek yoghurt.
    Then two egg whites, whipped.

Cooked for maybe 25 mins at around 180 in a fan over.

Made a lovely soufflé style dish.
But not quite what I was thinking.
Might try and follow a proper recipe tomorrow :).
