I am a working mother of an 8 month old and a 5 year old, plus I'm a college student. My older son is border line anemic and very underweight. Im trying to lose 50-60 lbs by the end of the year. Needless to say I don't have time or energy to make 2 seperate meals to accomadate each of our needs. Does anybody have any ideas to make him fat and healthy and me skinny and healthy without all the extra cooking?

You both need to be eating the same things because it's healthy is only one type of food. You just need to eat less than you burn and your son needs to eat more (lots of lean proteins)!0

Kefir.
It's a drink simalar to yogurt but it's actually better. It has at least 14 grams of protein. My favorite is Nancy's Kefir which is made with organic fruit and Agave the only place I've been able to find it is at Whole Foods Market.
On a regular basis I buy Trader Joe's Kefir. Both my kids like it but my two year old loves it and most days it's the only thing I can get him to eat.
Peanut butter is good as well.
Kiwi has more fiber then cereal, more vitamin C then an orange and it's delicious.
I also like to sprinkle ground flax seed in my pancake mix and the kids don't seem to mind.
I don't worry about putting weight on my kids since I've alway's struggled with my weight but I do try and sneak in as much whole foods as possable.

I have a similar problem with my daughter and she won't eat very much at one sitting. What I do is that I give all of the kids whatever we're having for dinner. I keep snacks in the house that the kids will eat but I know I won't. I also make things like chicken salad or I keep the peanut butter where they can reach it and the kids can have that whenever they want as a snack. I do keep some cookies in the house but only things that I won't eat - I mean seriously, does anyone BUT kids like those sugar wafer things?0

for your kid id reccomend a boost shake in the morning. great for child growth and development. or you could just use some organic equivalent of nesquik along with a glass of whole milk. whole milk is great for kids do to their high metabolism. as they get older try to ween them onto lower fat milks. like 2% then 1% then fat free. as far as yourself. keep doin what ur doin. just take everything in moderation. ;-)
or you could give your son a boost shake or ensure shake. and you could drink a protein shake.
the reason i would use a rtd shake for your child is simply the conveniece.
and for you a homemade one so you can tailor it to your needs.
some of my fav homemades are
1scoop EAS chocolate powder with 6oz of coffee (cold)
tastes like an iced mocha
or any low cal protein powder mixed with fresh berries.
EAS (120kcal, 23g of protein.)0 -

I agree. If you are preparing meals with lean protein, whole grains and lots of fresh veggies, than both you and your son are getting proper nutrition. The lean protein along with green leafy veggies will also help his anemia. You may just need to eat less, while he may need to eat a little more. Good luck!0
