These are the ones in my collection:

Appetite For Reduction by Isa Chandra Moskowitz
- I have made so many recipes from this book! Baked tofu, mashed cauliflower and potato, maple glazed carrots, ethiopian millet, mushroom tibs, black eyed peas, sweet potato and apple mash. Everything so far has been delicious and satisfying and since this cookbook has a variety of entrees and side dishes from assorted cuisines, I find it easy to "build" a variety of delicious meals that I can portion at about 400 calories each.

Skinny *****: Ultimate Everyday Cookbook by Kim Barnuoin
- This is beautifully photographed and has a lot of information in it, and it's not as verbally harsh as the regular Skinny ***** book. My only real qualm is that some recipes go above 400 cal per serving. So far I have only tried the orange scones and the chive and dill biscuits. Both have been DELICIOUS.

Any book by Vesanto Melina
I have her books Becoming Vegetarian and Cooking Vegetarian, and both of those books are easily adaptable for vegans (although now she also has Becoming Vegan, Cooking Vegan, Becoming Raw, etc). I've made some of her salads before and I have enjoyed a very nice millet and cashew based "cheesecake".

Good Housekeeping: Simple Vegan!
I have not bought this yet, I just found it at the bookstore yesterday! But it's less than 20 dollars, full of colour photography, and it has a handy lay-flat spiral binding. I dropped some hints heavily and with any luck I'll find it under my Christmas tree in a few weeks ;)

If you know of any other vegan cookbooks with the calorie counts included, or if you'd like to review any of them, please add to the book :) I know Moosewood includes nutritional info in several of their books, I'd love to read a review if any of you cook from them!

I have cooked from Moosewood for years and I love it. The recipes are well written and the information is very helpful.

The Vegan Table is another really good one. Haven't made anything from there that wasn't good and it has all the nutritional info listed for each recipe.
