Super-Protein-Power-Packed Cottage Cheese Scrambled Eggs

Here's my "Basic Recipe for Super-Protein-Power-Packed Cottage Cheese Scrambled Eggs" ...
Combine 1/3 cup egg whites, 1 or 2 whole eggs, 1/4 cup cottage cheese, 2-3 TBS Parmesan cheese & the spices/seasonings of your choice (I love crushed red pepper + Frank's hot sauce ... Then cook over medium heat stirring often (in a non-stick pan - lightly coated with oil).
Sometimes I also add spinach (or whatever produce I have on hand) which amps up the nutrients even more ...
Other times I replace the Parmesan with a little sharp cheddar & add jalapenos (and/or salsa) and make a super healthy protein-packed breakfast burrito ...

** Even if you LOATHE cottage cheese, since it melts into the eggs (much like ricotta does with lasagna), you'll love this ... Trust me! ~ It's delish and super healthy!

That does sound good! Filling too. Wrap it all in a tortilla with tomatoe chunks and raw spinach, onion and it ought to hold me a little while

I started adding cottage cheese to my scrambled eggs a while back. i like mine with mozzarella and olives. Cottage cheese is the best!0

just made a version of this.. 2 egg whites, one whole egg, a packet of grated parmesan cheese (like you get from a pizza place), 1/4 cup of cottage cheese, pepper, garlic, and some Frank's Red Hot..
SO DELICIOUS! and i'm full.
only 162 calories, 3 carbs, 7 fat, and 20grams of protein!
