Potluck with a twist
My MIL is getting married on V-day and it's all very informal. Only about 20 guests at a small Church and they are having a dinner @ the Church of all VERY bad things (for a dieter) and the theme is red & pink... I want to bring something that will fit into the theme and into my DIET... any suggestions!?!?!?!

Paprika pita chips and red pepper hummus. Get a pack of pita pockets, trim the edges off so they're not double-layered, and use a pizza cutter to make chip shapes. Spray them lightly with olive oil, and shake in a large ziplock bag with a mix of paprika, oregano, and parmesan cheese. Lay on a cookie sheet and bake at 350 until crispy.
For the hummus, blend a can of chickpeas, 3 cloves of garlic, and 1/3 c. roasted red peppers until uniform; add olive oil until creamy and smooth, extra points if the roasted red peppers were stored in it.0 -
