My MIL is getting married on V-day and it's all very informal. Only about 20 guests at a small Church and they are having a dinner @ the Church of all VERY bad things (for a dieter) and the theme is red & pink... I want to bring something that will fit into the theme and into my DIET... any suggestions!?!?!?!

    strawberry and yogurt dip you get the red and the pink and it is good for you!!!!!!!!!!!!!!:drinker:

    Tomato, basil and mozzarella shooters. Place a grape tomato, basil leaf and a mozzarella ball on a tooth pick. drizzle with olive oil. Yummy! It's like a caprese salad on a stick.

    pink and red jello squares, with fat free whip cream on top. great for the kids at the party also

    Paprika pita chips and red pepper hummus. Get a pack of pita pockets, trim the edges off so they're not double-layered, and use a pizza cutter to make chip shapes. Spray them lightly with olive oil, and shake in a large ziplock bag with a mix of paprika, oregano, and parmesan cheese. Lay on a cookie sheet and bake at 350 until crispy.

    For the hummus, blend a can of chickpeas, 3 cloves of garlic, and 1/3 c. roasted red peppers until uniform; add olive oil until creamy and smooth, extra points if the roasted red peppers were stored in it.

    Fruit Kabobs with Tropical Fruit Coulis

    Express yourself with a bit of the tropics. Create fresh fruit kabobs yourself or gather guests for fun kabob-making. From eatbetteramerica.

    makes:24 appetizers

    6 cups bite-size pieces assorted fresh fruit (pineapple, watermelon and cantaloupe)
    1 cup green grapes
    1 cup blueberries or red grapes
    3 small star fruit, cut into 24 slices
    2 large mangoes, peeled, seeds removed and cut into large pieces
    1/4 cup pineapple preserves
    1. Thread 4 to 6 pieces of fruits (except mangoes) on each of twenty-four 6-inch skewers. Place skewers on large serving platter; set aside.
    2. In food processor, place mango pieces and pineapple preserves. Process until smooth; pour into small serving bowl. Serve kabobs with mango coulis.

    1/4 cup sugar, divided
    1 large egg
    2 1/2 tablespoons fresh lemon juice
    1/4 cup water
    1 1/2 teaspoons cornstarch
    1/2 teaspoon vanilla extract
    1 1/2 cups frozen reduced-calorie whipped topping, thawed

    Combine 2 tablespoons sugar, egg, and lemon juice in a small bowl; stir well with a whisk. Combine remaining 2 tablespoons sugar, water, and cornstarch in a small saucepan; bring to a boil. Cook 30 seconds or until thickened, stirring constantly. Remove from heat. Slowly pour beaten egg mixture into water mixture, stirring constantly. Cook over medium heat 2 minutes or until thick, stirring constantly. Remove from heat; stir in vanilla. Cool completely. Fold in whipped topping.

    Fat free cool whip
    sugar free strawberry jello (just the powder)
    fat free cottage cheese 16 oz
    can of crushed pineaple smaller can

    mix all together
