Is this healthy?

This is a general guide of what I'm planning to include in my diet, I was just wanting to know your opinions and whether you had any suggestions or tips? It's pretty basic, so nothing exciting! (Also note, that breakfasts aren't breakfast foods, I'm at work as of 6am, can't sit down for a meal there and am not hungry til like 7 anyway - so ideas for that would be amazing!).
Breakfast:
x2 or 3 ryvita
x1 piece of fruit (apple, orange, berries etc)
Snack:
A few almonds
x3 GF rice thins
Lunch:
Around 150g of chicken breast (grilled/baked)
Fresh baby spinach salad with carrots and cucumber and a little vinaigrette dressing.
(Or chicken and vegetables cooked in a different way)
Snack:
Few almonds and maybe a yoghurt if I'm quite hungry.
Or if going to the gym, a banana aswell.
Dinner:
100g chicken/lean meat
Steamed vegetables (broccoli, carrots etc).
And then around 2.5L a water a day too.
So that's actually pretty similar to what I've eaten my whole life - just minus the carbs I tend to shovel down hahaha (which I presume make me gain weight as I rarely eat junk food or drink alcohol anymore). At least we'll find out if that's the case! I know that it could sound like quite little, e.g just 100g meat for dinner, but I've never been a big dinner eater anyway, nor breakfast. I'm a lunchtime/afternoon kind of girl!
So does anyone have any ideas for breakfast alternatives? I find breakfast and lunch the two meals where I'm most likely to slip up as I'm not always at home to cook healthy food and get tempted by that damn Subway chicken fillet! So alternatives that are handbag friendly and preferably aren't carb heavy would be great! (Also, I can't eat pre-made wrapped food. Like cling filmed food, it's a pet peeve like nails on a chalkboard.)
Also, is this a good plan for both weight loss and just general health? I'm just concerned that it's not enough considering how close it is to my diet of practically my whole life. Only difference is the lack of carbs. I don't want to drastically cut calories, I want something I can stick to and gives me energy etc. But I also want results!
Oh! And what are good pre/post gym snacks?

That seems like a lot of meat to me if you are eating that everyday. Also, is it enough calories? Seems like you are a not having enough carbs which is going to be super hard to stick to because your body needs them for energy. I would replace your breakfast with some untoasted muesli with trim milk because it's super high fibre (to fill you up!) and low GI (for sustained energy). Also I'd recommend eating that banana anyway to get your 2+ fruit a day. And switch the nuts up to keep it interesting and get a range of nutrients! You're probably having a hard time sticking to it if you are eating the same thing everyday because it can get boring. Try a few different meal options around you know you like. I always keep apples in my bag and healthy snacks in case I feel hungry. Then I know I've got something healthy to reach for.
That's just my opinion anyway. Gym buddy soon?

Ahh I know, I don't even like meat (wouldn't even eat it if I didn't have to, - I was vegetarian for 9 years til the ol' doctor put the orders in to eat meat again). But I figured as I wouldn't be eating much wheat/sugar, protein would be the best source of energy? I know veges are good, but they don't exactly fill me up!
Also I'd cook them different ways each day, like grilled/salads/stirfrys/casseroles etc. I eat chicken and veges every night anyway, since I started eating solids as a baby hahaha. So eating the same thing isn't a big deal really, how interesting of me, no?
Yeah I thought muesli would be good, but I don't find cereals fill me up, plus I can't eat muesli while I'm working (retail, so no desk or kitchen to eat in! don't even get breaks, so need to be able to just run into the back room and have a quick nibble every now and then - hence my dilemma!).
And yeah I want lots of options so I don't get bored of snacks, but I'm way too fussy for my own good which makes it difficult!

I boil a few on the weekend and have them ready to take to work
