Brown Rice Power Breakfast

Perfect healthy way to use up your leftover cooked rice.

Makes 4 servings.

Ingredients:

-2 cups cooked whole grain brown rice
-1 cup plain soy milk
-1 tbsp peanut butter
-1 tbsp syrup of any kind
-1 tsp cinnamon
-dried/fresh fruit, nuts, seeds of your choice

Instructions:

In a large saucepan, bring rice and soy milk to a boil. Reduce heat to low, add syrup, cover, and allow to simmer for 15 minutes or until mixture is slightly looser than porridge. Add peanut butter and cinnamon and mix thoroughly. Remove from heat and serve with assortment of toppings.
