Hi!! I have been doing low carb and have stalled. I have eaten normally the last 3 days and had a little loss. I think my problem was I wasn't eating enough calories. I see a lot of people use coconut oil for fat. Can you please give me some examples of how you use it daily?? Thanks!

one of my friends cooks her bacon in it, i tried it and found it a bit of an acquired taste, coconutty bacon, but she loves it. some other people on message board make a chocolate substitute called coco bark with it, thats ok though can be a little sickly if you have too much of it.
i made a saag aloo (with celeriac rather than potato) and i used it in place of olive oil and in a chicken korma that i made that way you don't have to use coconut milk etc and u still get the taste... incidentally its great on your hair just massage some into your hands and run through your wet hair, not too much, but it makes it so soft and shiny!
i think you can just experiment with it in your cooking. i didn't hate the bacon, but i didn't do it again!0 -
Sorry, not a Keto person, but I have replaced all the oil I used for cooking with coconut--frying or baking. Lots of people add it to coffee. You can even eat it straight out of the spoon. I also use it on my skin. And give it to my pets. They love it.0

I've used it twice in my coffee instead of a creamer. It gives it a different texture and subtle taste. It makes the coffee oily which was weird at first, but I don't mind.0

Cocoa bark refrigerator candy
2 tbsp coconut oil
1 tsp green and blacks cocoa powder
Sweetener of choice (liquid is best)
Flavoring (optional)
I only used 1/2 a tbsp of cocoa because my supplies are running low and it was fine, so do experiment.
Take a plastic container suitable for freezing and spoon 30g (2tbsp) coconut oil into it. Microwave for 10 seconds to melt. Stir in sweetener, cocoa powder and flavoring and mix very thoroughly.
Spread to desired thickness and put in the freezer for 10 minutes minimum, or as long as you like.
You essentially get a thin chocolate bar out of this. When you take it out of the freezer you can snap bits off to eat - its very rich so I'll only be eating a couple of bits at a time. Store in fridge or freezer and snap more off when you want it. Eat within 10 minutes of taking out of freezer as the oil melts fast.

Put it in your coffee! Adds a nice hint of coconut and a creamy texture (helps if you blend it together). Cook your chicken in it and add chinese five spice or similar sweeter spices for a nice, tropical dish.Fry your eggs in it! Delectable. It can pretty much be used in place of any oil, just know that it will add a light coconut flavor to your dish.
ETA: it's also wonderful on hair!! Some people use it as a moisturizer with great results. http://www.deliciousobsessions.com/2012/05/122-uses-for-coconut-oil-even-more-of-the-simple-the-strange-and-the-downright-odd/0 -

if you dont like the coconut flavour, get virgin coconut oil, i think only the extra virgin has the flavour
i could eat that stuff straight from the jar0 -
I didn't know I had the virgin stuff until you all said regular had a coconut flavor! I was disappointed my stuff didn't taste coconutty, but then I checked my label. Ha!
*bump* for that recipe... mmm...0 -
I use (GOLD TOP) COCONUT OIL )
We just love to fry our potatoes in it, along with a bit of carrot broth.
