Buffet Ideas

Hey Guys -

My friend are I are both on the diet wagon and it's her b'day this weekend. We've already agree'd that seeing as we're going to be drinking that the day will be a bad one calorie wise, but we figured that a good way to not go completely *nuts* is to try and make our own food for the night so we are both looking at doing a healthy buffet. Mainly finger foods and a healthy chilli (turkey mince) on the side. So I was just wondering if anyone had any low cal/low fat suggestions? Time isn't an issue as i'm off the day before so I can always try and prep things before hand :)

    you can't have a buffet without chinese hehe

    This is sooo easy and satisfies my chinese craving...I use chicken beef or pork and add 1-2 cups of cooked frozen veggies close to the end

    Orange Chicken

    1 Chicken breast (cut up into cubes)
    3/4 of an egg white
    1 tsp of cornstarch
    1tbsp olive oil (to fry chicken)

    cut up chicken and put in bowl add egg white and cornstarch..then fry in oil until browned (remove from heat and set aside)

    Sauce

    1/2 cup Chicken broth (low sodium)
    *1 tbsp of Soya Sauce (low sodium) I now leave this out or use ponzo sauce too much sodium in soya for me
    1/4 C Vinegar
    1/4 tsp Chilie flakes
    1/4C Brown Sugar ( I use 3 splenda instead)
    1/2 orange juice squeezed and a bit of zest (or I use orange extract )
    Cornstarch slurry (water with a lil cornstarch) when sauce is almost done put this in

    Put all ingredients in fry pan and let cook down a bit then add chicken and when almost done add the cornstarch and water

    This only takes a few moments and it is sooooooooooooooo good

    Hummus with carrots and celery sticks.

    Hummus is super easy to make.

    1 can chickpeas
    1-3 garlics (depends on your liking)
    2tbsp Tahini paste
    1-2 tbsp lemon juice
    1tbsp liquid from chickpeas
    2-3 tbsp olive oil, slowly drizzle in while processing in food processor

    That is a basic hummus recipe. This weekend I made a black bean and cilantro. With just black beans, olive oil, lemon, and a handful or two of cilantro, and 3 cloves of garlic. It's delicious!

    For parties I do mezzes dips with crudités or Ryvita. Hummus, tzaziki, Moroccan carrot salad. The last is boiled carrot mashed with cumin, ginger powder, chopped raw garlic, wine vinegar and olive oil.

    And I forgot aubergine dip. Use a recipe where you roast the whole aubergine first so you don't need the frying fat.

    Go out, hunt an animal of your choice, and feast on the beast over fire and Ale, just like the heros of old.

    And if your dame is one to be impressed, use a hand fashioned bow and arrow from bark of a white tree, and use a hatchet fashioned from the bones of an orc (check ebay for orc bones, cant find one walking around easily these days)

    One of my favourite finger food buffet things is green asparagus wrapped in serrano ham - wrap the asparagus in half a slice of ham, put on a baking tray, sprinkle a drop of olive oil (or cooking spray), some black pepper on top and put under the grill for a few minutes, it won't take long. Absolutely delicious and not too bad on the cals :-)

    Sliced sandwich meats wrapped around fruit is surprisingly yummy - ham around a piece of apple or prosciutto (watch the salt and small pieces so you can eat a few) wrapped around cantaloupe with a toothpick through it. Nice finger food plus you're getting some protein and it doesn't taste weird with beer :P

    Mini quiches are another good one especially if you don't use pastry - just a few eggs and a tbsp of cream whipped together with whichever veggies you like (mushrooms and asparagus work v. well)... pour the mixture into a muffin tin and little sprinkle of parmesan on top and bake for 15-20 - delish!

    I usually do several salads (make them interesting) - last time I did a fattoush and a more greek style one, and a rocket & parmesan with balsamic.
    Bowls of cherry tomatoes, veg sticks (cucumber/carrot/pepper),
    A fresh salsa (red onion, tomato and sweetcorn with some lime juice/fresh coriander (cilantro) and chilli is good)
    A few fresh low fat dips like a salsa verde and a chimichurri.
    Then protein wise - hard boiled eggs (or pickled eggs are popular here), homemade chicken tikka, lean meat spiced kebabs or spicy meat patties (as long as the mince is lean you can use lamb/beef/pork/chicken/turkey - whatever takes your fancy), fish (a side of salmon is nice or peppered sardines or trout), seafood such as I do a spicy prawns with chorizo/red onion/lemon/chilli

    For the carbs there is nothing wrong with a nice baked potato or baked sweet potato if you prefer. I also do a potato salad with boiled potatoes and red onion but do an olive oil based dressing with lemon and spices. If you fill your plate with the proteins and veg and have a small amount of carbs it tends to be not too bad.

    Pudding wise - nice fruit platter, with maybe some pb2 or other peanut butter to dip it in (made up) and a chocolate dip and some marshmellows on the side.
