Chicken Breast and What for Dinner

I have about 3-4 oz of left over chicken breast from the other nights dinner. Normally I would just shred it up throw it in a salad or cook up some rice and steam some broccoli.

I am looking for some alternatives as to what I can make for dinner tonight with this chicken breast.
*skinless bonelss* if that helps.

    if you can cube it, you can make chicken cacciatorie, one of my favs, just a jar of spaghetti sauce, also saute lots of green peppers, red onions and mushrooms, and serve over egg noodles

    Enchiladas! MMMMM!!! Or even just simple tacos with healthy refriend beans (I just mash canned pinto beans, same taste, much better for your waistline!), low-fat sour cream and some shredded oaxaca cheese...and of course the veggies (lettuce, tomato, onion, cilantro!)

    I think you just made my dinner! LOL
  • Stir fry with green peppers, onions and celery
  • saute with a touch of teriyaki sauce, add green peppers, red peppers, onions, and pour over a cup of rice. Quick and easy. Only about 250 calories.

    Put it in with some corn, black beans, tomatoes, onions, peppers, taco seasoning, and some water. Let it simmer for about 30 minutes and enjoy some chicken chili.:love:

    Add a little rice (or some other whole grain) and some shredded low fat cheese. Yummy, I make this all the time for my family!
