Reaching 1500 calories on carb cutting days

Hey everybody, new to the message boards. I'm having trouble staying at my 1500-1800 daily calorie goal on my low carb days. I only try to have 20-30 grams of carbs on these days. Anyone have any good meal ideas?

My super market sells whole cooked chickens for $5. That's well over 1000 calories (with skin) and basically no carbs.0
