Last night I made my roommate some squash soup, and it came out delicious!

- 8 cups water (boiled down some near the end because it was a bit thin. 6-7 would probably be better)

- 3 bullion cubes

- 1 butternut squash

- 1/2 acorn squash (would have added more, but I got tired of chopping)

- Teaspoon or two of olive oil (perhaps unnecessary?)

- chipotle powder

- bay leaf

- salt

- pepper

- sage

- Secret Ingredient: Somewhere between a quarter and a half cup of Aldi's "Sassy Apple" salsa (http://www.myfitnesspal.com/food/calories/aldi-specially-selected-sassy-apple-fall-harvest-salsa-46456109)

Directions: Place water, bay leaf, oil, and bullion on stove and start heating. Chop up squash and add it to the broth. If you are a slow chopper like me, by the time you finish chopping everything the other squash will pretty much be cooked. Somewhere in between the chopping add the other spices. Remove bay leaf. Add salsa. Blend with immersion blender. Boil down a bit because it is watery. Eat.

I also made sage croutons (piece of bread sauteed with butter and sage, then chopped into croutons) to top the soup with.

It was very, very delicious. I heartily recommend it.
