^^ I'm actually going to the store today to get the ingredients for their black bean salad. I made it once and my boyfriend adn I loved it!

Personally, any type of meat with a ton of veggies to roast in the oven. that's how I try to do things

I just made pita bread pizzas for lunch. I got mini wheat pitas, 150 calories for two. And added pizza sauce and cheese. Very tasty.

I also made baked eggplant parm yesterday which was so satisfying.

I've been on a salad kick lately, but GOOD salads not just a bowl of lettuce. I have a Trader Joe's nearby and I eat their pre-made salads, but always check the serving size because they often put in two servings. Still typically worth it to eat the whole thing :).

I'm going to make bean nachos tonight, I think. But since I opened up the jar of pizza sauce I need to use that up. So it might be eggplant parm again :)

there's nothing magic to cooking, some old-timey recipes had tons of "fluff" in the steps etc to make it seem more "remarkable / difficult" than it is.

Follow the ingredient list on a recipe the first time you try it, see how you like it... adjust amounts of ingredients to your taste next time ie it may call for one clove of garlic, you may prefer one head of garlic instead.

Bread making doesn't need tons of kneading that was once "tied" with how much "care" you had for your family, more kneading more care, not really different result in the loaf from the oven if you mix everything thoroughly.

Recipes are for most things guide-lines if it calls for anchovies and you don't like them leave 'em out.

A lot of newer recipes suggest 425-475 for temperatures, I still do most of my cooking at 350 (the smoke-detector goes off whenever the oven is opened at a higher temperature) takes a couple minutes longer at the lower temperature but much less chance of burning if you're not "right there" when the time has been reached.

    Thank you all so much!

I get discouraged because what some people say is good for you others say is the devil...

It seems like there is no clear cut answer to what you should eat.

I see a lot of sandwiches on her site, and that includes bread.... and I really do not want to give up milk, but I will try using skim milk instead of 1%.

Oh another one I make a lot is egg stuffed baked potato....bake the potato (or go lazy-man and microwave it, which is why I do) then scoop out the insides, crack an egg inside it, top with cheese and hot sauce (or whatever you like) and then bake until the whites are done, must have the yolk runny! Trust me. Soooo good. I could eat it every day.
