Make Your Own Egg McMuffin

Had this for breakfast this morning... absolutely incredible.

Cook Eggbeaters in an omelet pan with some nonstick spray (no butter). Cook it like an omelet and fold it over on itself. Cut it in half and put it on an english muffin with 2 slices of Canadian bacon and 1 slice of American cheese. It's a HUGE sandwich, way bigger and better than McDonalds. Very hearty and satisfying.

280 calories, 31 carbs, 9g fat, 25g protein, 33mg cholesterol, 1,000 mg sodium. Enjoy!!!

    My husband and I call them "fried egg sandwiches". We'll make it with 2 eggs on just regular toast with a slice of cheese, and a couple slices of deli-ham. You're right - it is huge, and YUMMY!!

    I do this all the time, often for dinner and I use real eggs and turkey sausage. Nummy goodness and awesome protein. :)

    My mom made these for us when I was a kid, and I still make them. My kid loves them too. I use one whole egg, a slice (or two) of Canadian bacon, topped with a slice of cheddar. Toast the english muffins, a little butter, and put it all together. I usually wrap them "fast food style" in a piece of waxed paper - keeps them hot on the table while the kid is getting ready for school, and makes the whole thing all soft and yummy.

    Dang, now I want one and I already had breakfast! :tongue:

    LOL. Thanks. It IS awesome and worth the extra sodium. Keep in mind I'm not suggesting you eat it every day. You probably wouldn't want to - it's a LOT of food. But at 280 calories it won't break your calorie budget.

    The biggest sodium culprit isn't the Canadian bacon... it's actually the 1 slice of American cheese. If anyone knows of a decent low-sodium cheddar, I'm all ears!

    Pretty good. I make my own egg mcmuffin too, but I use 3 egg whites, turkey sausage patty (walmart sells the great value brand) and put it on a 100 calorie sandwich thin or bagel thin. I can do without the cheese, but have put it on there too sometimes.

    One of the variants I make:

    5 egg whites (60 seconds in a bowl in the microwave)
    1 slice thin smoked ham
    1 slice reduced fat jalapeno pepper jack cheese
    1 whole wheat sandwich thin

    187 calories, 12g carbs, 6g fat, 20g protein, 550 mg sodium (most of which is from the ham and cheese)

    I'm not crazy btw -- I just really can't eat a lot of salt because that and edema (swelling and water retention) has me blowing up at the first sprinkle of it. Hell yeah I'm making this tomorrow. =P

    And to answer the q... of course I prefer provolone, but -- have you tried Heluva Good?

    This is what I made this morning:
    1 Thomas' Hearty English Muffin
    3Tbs Southwestern Egg Beaters
    1 thin slice 2% sharp cheddar cheese
    1 MorningStar spicy 'sausage' patty

    Perfectly delish! My 12yrold guest even liked it (I didn't tell here there was no real meat in it tho) :tongue:
