tofu soup

Has anyone tried tofu veggie soup? I ordered it for lunch. Then I was told this particular place is only so-so about the taste. Apparently I should go ask a co-worker to make it, since she does it the best. Anyone else have a recipe for it? Or know a place that they like it from?

    I was just looking at the baked marinated tofu at Trader Joe's today and trying to conceptualize a soup.

    It’s a great recipe as it is but can be customized to your liking. I make a few substitutions like low sodium soy and coconut oil. Frozen veggies can be used if you’re in a hurry, just adjust the cooking time. I’m not a fan of carrots, so I usually use cabbage or bok choy, red and yellow peppers, cauliflower, broccoli, and mushrooms. I also cook the vegetables for about 15 minutes (except the bok choy which I add during the last five minutes of cooking) since I like them to be mushy. I’m a fan of spice and either use siracha or I add a fresh red chili while the broth is coming to a boil. The last time I made this, I used arrowroot to thicken the broth of the leftovers and ate it over quinoa the next day. Yum! I have also used Trader Joe’s Organic Baked Thai Flavor Tofu in the soup and it had a great “meaty” texture. Enjoy!
