Mediterranean Casserole (<300 cal per serving)
Made this one tonight for dinner and it turned out to be super yummy, filling and under 300 calories per serving
Makes 6 servings:
1 lb lean ground beef (I used 93% lean)
3 small zucchini, halfed lengthwise and sliced
2-3 bell peppers, diced (depending on size, I used 2 small red & 1 big yellow)
1/2 onion, diced
4 gloves garlic chopped
1 tbsp oil
1 tbsp sugar
1 28oz. can of crushed tomatoes
1 1/2 cup shredded mozzarella
salt, pepper, herbs de provence
1. Brown the ground beef in large skillet, season with salt & pepper. When beef is no longer pink, add onion and garlic and saute till onion is soft. Put aside on plate.
2. Add oil to empty pan and heat up. Add zucchini and bell peppers and saute till veggies start to soften (about 10 min, depending on size of pan). Season with salt & pepper.
3. Add crushed tomatoes, beef/onion mixture, sugar and season to taste with herbs de provence and eventually more salt & pepper.
4. Put everything in a 9x13 baking dish and top with shredded mozzarella. Bake at 400°F for about 20 min. Cheese should be slightly brown.

I served it with Rice-A-Roni italian creamy garlic, but I'm sure it would taste great with any kind of pasta, rice, couscous or quinoa.
