Nothing like throwing a hog over a bed of coals and cooking it all night. Pulled pork, slow cooked for 10-12 hours is incredible. The best part is the tongue. WE used to fight over it. Mmmmmmmm.....0

We smoke Pork, Beef, Chicken and Turkey's. Some for us, most for others or for charity functions. Nothing like a piece of smoky goodness!0

I compete. My team has one many BBQ contest (amateur division). Went Pro last year and then didn't have enough time to seriously compete. Hitting it again this year starting in late Feb.

I'm in Texas. It's good to like BBQ here.
I was 20 before I realized some parts of the country refer to "grilling out" as Barbequeing. I showed up for a Bar BQ to only find hotdogs and hamburgers. I was looking for a whole hog over a pit that some one had stayed up with all night slowly barbequeing.

I love BBQ as well! I grew up in Texas, so I always assumed that BBQ = beef. I quickly learned that east of Texas, BBQ = pork. That said, I do love me some pulled pork!
In NC, BBQ only means smoked pork - either whole hog, or pork butt --- typically chopped. Nothing else really counts as bbq.
Example - if you go into a restaurant and order the bbq plate or bbq tray, you're getting chopped smoked pork.
