Food prep- what's your strategy?

Having recently started a cleaner lifestyle change I have decided that food. Prep (at least for me) is incredibly important. Having food on hand when you're busy and running out the door goes a long way and helps resist the urge to pick up some take out. I have 2 cook days a week, sunday and wednesday where i cook my lunch and dinner options ahead of time. For those of you who prepare your food ahead of time, any staples you enjoy?

Chicken and broccoli with a little bit of blue cheese
Chicken with goat cheese and spinach
Salmon and asparagus
Turkey breast with cauliflower "mashed potatoes"
Chicken stir fry with snap peas, carrots, brocolli and onion with low sodium soy sauce and almond butter sauce
Turkey burger with lettuce wrap and veggies

    Some of the things that I make each week to have on hand are:

    Homemade salad dressing
    Fresh pico de gallo
    Roasted veggies
    Hard boiled eggs
    Rice
    Chicken or Moose
