favorite vegetarian meals?

Hi! I've been pescetarian for a couple months and am loving how I feel so far! My husband isn't though, and while we make brown rice/whole wheat pastas and fish at night, I want to introduce other tasty, vegetarian options to him for dinner. He's open to it, I just need to find good recipes! Does anyone have any suggestions? :) (Btw, we like pasta, but are trying to not eat too much of it since it's kind of heavy for right before bed) Thanks!

    Chickpea burgers with sweet potato fries and guacamole (my favourite!)
    Baked salmon fillets with mashed potato, broccoli and parsley sauce
    Mushroom casserole
    Seared tuna steak with fresh salad

    Ooh I'll definitely look into chickpea burgers with guacomole and sweet potato fries, thanks!! :) I love most vegetarian dishes, it's more a matter of finding ones my husband will eat! ;)

    During Lent, we make soy meat tacos. Just a package of soy ground "beef" crumbles, a can of fat free refried beans, whatever taco seasonings you like. Add taco fixin's and a shell, you're good to go! The kids don't notice a difference, and it's one of the few Friday night meals they don't complain about during Lent.

    I also used to make eggplant pamesan (I don't know why I don't any more), slice your eggplant in 1/4 to 1/4 inch slices, dip in egg and coat with wheat germ. Bake (I don't remember how long-- I think I just poked at them periodically) until done. Pour spaghetti sauce over them, sprinkle with mozzarella cheese (or parmesan-DH just likes mozzarella better).

    I like portabella mushroom burgers

    Serves 2
    Marinated portabello mushrooms make delicious sandwiches. Serve them on hamburger buns and top with cheese or whatever ingredients constitute your "Cheeseburger in Paradise". You'll save tons of calories and artery clogging fat and still have a flavorful meal.

    Ingredients: Marinade:
    1/4 cup soy sauce
    1/4 cup olive oil
    1/2 cup red wine vinegar
    2 tablespoons Worcestershire Sauce
    1/4 teaspoon liquid smoke
    3 minced garlic cloves
    1/4 teaspoon black pepper
    hot sauce to taste

    2 large portabello mushroom caps
    2 large hamburger buns
    2 slices cheese (optional -- swiss, or muenster are my favorites for this recipe)

    Optional Toppings:
    tomato slices
    lettuce
    onion slices
    bacon
    avocado
    green chilis
    mayonnaise
    Instructions: Combine all marinade ingredients together. Place each mushroom in a shallow bowl, gill side up. Pour 1/2 of the marinade over each mushroom, pouring a little in the bottom of the bowl first, to wet the upside down cap, and the remainer into the upturned cap. Marinate for 5-10 minutes. Do not marinate longer as the mushrooms will absorb too much marinade.

    Grill mushrooms on a wood or charcoal fire, or in a hot skillet on the stovetop, or under a broiler. 2-3 minutes per side will usually do, or until the mushrooms are browned and tender. If desired melt a slice of cheese on top during the last minute or so of cooking. Serve on burger buns with toppings of your choice.
