Easy Tasty Lunch Ideas 300 calories or less.

Hi,

I'm looking for some easy Lunch ideas that are satisfying (high fiber), Tasty (does not taste like cardboard) and 300 calories or less. I have a very satisfying quinoa and butternut squash recipe but I really need some variety. I am not on a low carb diet. I have kidney problems so anything too high in protein (especially animal protein) or salt is not good for me.

    Not sure where you live and what stores you have access to, but I've recenly found yummy soups and salad (kits) at Fresh & Easy.
    The salad I get does have bacon bits in it but the soups I buy are non meat and no dairy!

    cup of soup and serving of salad kit ~270 cal

    I often eat eggs on tortillas. We have a microwave and stuff here at work so I do microwave cooking magic. lol :)

    Also, I often make soups with veggie/non-dairy soup bases adding in wild rice and squash, potatoes, zuccini...

    Can't think of what else I eat at the moment!
