Reluctant vegetable eater...

Carbs are my weakness and while I don't want to go full Atkins, I do want to drastically lower my carb intake and increase my vegetables (from just about nothing). The problem is, I know absolutely nothing about veggies apart from salad.
I think I should stay away from super starchy, low vitamin ones (potatoes and corn) but I don't know what to do from there...
What are some easy, few ingredient (key words there as I'm also not the best chef) recipes that are good for weight loss? Or should I just stick to salad and green beans.
Thanks!!
