Baked asparagus! I throw it in a big baggie with pepper and teensy bit of olive oil to coat. Then bake it for 25 minutes. And I sprinkle grated parmesan on it before it hits the oven. So good!0

Pepperidge Farms milano Cookies is both a good side dish and dessert!0

Sweet potatoes are by far my fave. One of my favorite ways to make them - it's really easy - is to chop up a large sweet potato into one inch cubes (leave the skin on!), throw 'em in a bowl and drizzle the cubes with a tablespoon or so of olive oil. Take a spatula or large spoon and stir the cubes up so the oil covers them completely and well. Then season with whatever you like - I like a little paprika and rosemary, but have also made them sweeter by tossing the cubes in hazelnut oil and dashing some cinnamon or even pumpkin pie spice on them. Then stir them up again.
Line a cookie sheet with some non-stick aluminum foil and dump the oiled, seasoned cubes onto the cookie sheet, and cover with another sheet of aluminum foil. Then throw them in the oven for a half hour or so at 400 degrees.
OH MY STARS. Yummy yummy yummy.
yummmm, going to make some tonight!0 -

I like green beans with a little cajun seasoning (tony chacheries) or steamed broccoli with soy sauce. Yum Yum!!!0

This is one of my current favorites: http://www.eatingwell.com/recipes/mediterranean_roasted_broccoli_tomatoes.html
I omit olives and capers personally, though.
I also have salads quite a bit (right now - mixed greens, grape tomatoes, a little feta, and some pear vinaigrette)0 -

Roasted veggies!!! And i like pasta and stuffed potatoes. Oh, stuffed potatoes are heavenly!0

Parmesan roasted asparagus or zucchini are great. I like the minute rice single serving cups you can just pop in the microwave, they have brown and brown&wild. Spaghetti squash as a side is great too.0

Steamed Broccoli, without butter. You can eat a ton and it tastes great... Low calorie, high in protein, and packed with essential nutirients. If at home or if you can take it with you, Butter Buds is a great way to add seasoning without sin.0

broccolini sauteed in chopped garlic & grapeseed oil. YUM0
-
Mashed carrot and swede (or just swede) with black pepper and a little light butter!
^^ This is my favourite, so so good!0 -
Coleslaw with a vinaigrette dressing as opposed to a traditional mayo/creamy type. I buy the bagged coleslaw, and try all kinds of vinaigrettes. Add diced veggies if you want.0

I love (like a ton of other peeps) Oven Roasted Sweet Potatoes but when I toss mine with olive oil I like to add a sprinkle or two of chili powder or some Southwest seasoning. It's surprising how much zip just a touch of that adds.
Also roasted yellow squash with zucchini or asparagus.
I could eat a pound of asparagus roasted with garlic. Yum! It's especially good nearly burned to a crisp.:happy:0 -
Oven roasted butternut squash, brussel sprouts, and red potatoes with garlic, onions, sea salt and a drizzle of truffle olive oil0
