Potato/Cauliflower Soup w/ Beef Broth

Ingredients:

1 Can Whole Potatoes, cut up
2 Cups Frozen Cauliflower
2 tbsp Bacon Bits
1 Can Beef Broth
2 tsp Minced Garlic
1/8 cup Low fat shredded cheddar cheese
Salt, Pepper, Garlic & Onion Powder, Cayenne Pepper to taste

Directions:

1. Saute bacon bits until crispy, remove from pan
2. Add garlic, potatoes, cauliflower, broth, and spices.
3. Simmer until veggies are very tender, approx. 15-20 minutes
4. Remove from heat and puree in batches in a blender until smooth.
5. Top with reserves bacon and cheese.
6. Enjoy!

Makes a huge bowl of soup!
