Spinach&Mushroom Sandwhich 259 Cals (Easy&Quick!)

Ingredients: 2 Slices of whole wheat or whole grain bread. I use 60% Whole Wheat Bread from Deli World (170 cals per 2 slices) but any will do.
1/8 of Avocado (28 cals)
Muchrooms, raw, slices 1/5 of a cup (4 cals)
Spinach, raw 1/3 cup (2 cals)
Low fat brie cheese, about 4 thin slices (55 cals)

Preheat oven to 350 C. Spread avocado over both slices of bread and add spinach and mushrooms to one slice. Add the 4 slices of brie cheese to the other side of bread and place each slice in the oven. Don't put on top of each other because the cheese won't melt as good and the bread doesn't toast as evenly. After about 3 minutes, take out and eat! A quick and healthy meal :)

    oh great idea! I always forget there are other cheeses besides mozzerella :) sounds like a wonderful, easy, and inexpensive sandwich. a toaster oven would be perfect for this! thank you so much for sharing!
