Tuna Wrap - Tuna, a lil sesame oil, dried cranberries, light miracle whip, celery, onions, chopped carrots, fresh-ground pepper and a few bits of sun-dried tomatoes. Mix together, spread into a flatbread wrap, and enjoy. I just made it up with what I had handy(without thawing), but I like it.

Stuffed Yellow Squash - haven't tried this yet, it's my own recipe and what I've "planned" - hope it turns out well

    Serves 6

1 leftover chicken breast from the other night (chopped)
2 cups leftover rice from the other night
3 yellow squash sliced in two with insides scooped out (reserve insides)
    1 zucchini chopped
    2 slices bacon chopped
    1 cup diced tomatos (drained)
    2 egg whites
    3 T parmesan cheese
    1/2 c black beans
    1 cup broccoli chopped
    onion flakes, salt, pepper, garlic

Cook all ingredients in a skillet to warm through - divide evenly amongst squash halves and bake at 350 for 20 minutes.

    I love Turkey meatloaf!
    I use this http://recipes.sparkpeople.com/recipe-detail.asp?recipe=567725 recipe from sparkrecipes.com
it calls for BBQ sauce and a packet of ranch seasoning, but I've used Italian seasoning and marinara sauce! SO good either way!

it was supposed to be left-overs... but i made purple chicken in the crockpot instead. it made the whole house smell so good. :)

    WHAT IS PURPLE CHICKEN? :noway:

purple chicken is a recipe my grandmother made up over 40 years ago. it used to be a huge family secret, but someone must have given out the recipe because i have seen it in mags and online recently. it is canned cranberries, catalina island dressing and onion soup mix over chicken breast (i know that it sounds gross, but it is delish). it turns the chicken purple. it tastes so good with brisket too!

mmmmmm sounds neat, might have to try!
