Cook it up like you would regular sausage, and add it to Ratatouille- a great way to pair protein with vegetables, and it's a satisfyingly warm and filling entree for cooler months :)

Ratouille is really easy; I slice up eggplant, yellow squash, zucchini, mushrooms, onions and tomatoes; start with about 2tbsp olive oil and saute minced garlic (i like to use about 2 pieces coarsely chopped) until it starts to brown; add vegetables, maybe some more olive oil, if you desire, and cook on medium low heat. meanwhile, cook up your sausage, and when the ratatouille is almost done (you'll know it's ready when the zucchini is cooked through) add the sausage to it. Mix, season with whatever blend of spices suit your fancy (I use S&P, oregano, tarragon & basil) and enjoy!

If you want to splurge, you can add cheese of any kind, grated parmesean, sliced…

i make it like sausage and peppers also. I always get the Al Fresco brand with roasted garlic or the red pepper and asiago. sautee green peppers and onions, cook the chicken sausage separately then add it all together once it's done. one of my favorite meals! i don't put it on rice or anything though.
