Crazy Low Cal Almond Vanilla Ice Cream!

My roommate and I just invented this, and its amazing! Im even going to add the recipe as a meal on here once I'm done this post.

1 cup Almond Breeze Unsweetened Vanilla Milk
1 cup skim milk
1 egg white
sweetener and vanilla to taste

Thoroughly whisk together all ingredients in a double broiler (to prevent milk from scalding), then transfer to a metal bowl. Fill a larger bowl with Ice cubes, about half a cup of salt, and a bit of water, then allow to chill, scraping the sides and stirring every 10 minutes or so.

I'm going to add the recipe as meal " Homemade Light Almond Vanilla Ice cream,"

It's about 72cal for 1 cup, or half the recipe =)

    PS the "meal" amount is 142 cal, so for the entire batch =)

    a "double boiler" can be just a glass bowl sitting on top of a pot of simmering water.:smile:

    Yeah that's actually what my roommate and I used.
