Steel-cut oatmeal cookies?
I'm trying to find a yummy recipe for oatmeal cookies that uses steel cut oats. I've searched the net, and can't find any that have really good reviews - nuts are okay, chocolate is okay, dried fruit is okay - in fact, the more different the better!
I am not looking for a low-fat or healthy recipe necessarily, just something that tastes good and has good texture. Does anybody have one??
I'll be feeding these to people who have an aversion to fake sweeteners, so I'd like to avoid those.

I know it says quick oats, but i never use them. i use either steel cut or old fashioned and they taste even better b/c they dont get gummy. the chocolate chips and nuts are optional, i use them b/c it's a nice treat and great texture
Oatmeal Chocolate Chip Cookies
Ingredients:
1 cup butter, softened
1 cup light brown sugar
½ cup white sugar
2 eggs
2 tsp vanilla
1 ½ cups flour
1 tsp baking soda
¼ tsp salt
3 cups quick cooking oats
1 cup chopped walnuts
1 cup chocolate chips
Directions:
1. In a large bowl, cream together the butter and sugars together until smooth.
2. Beat in the eggs one at a time, then stir in vanilla.
3. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.
4. Mix in the oats, walnuts and chocolate chips.
5. Cover and refrigerate for at least 1 hour.
6. Preheat oven to 325 degrees.
7. Drop by tbsp full onto ungreased baking sheet.
8. Bake for 10-12 minutes.0 -

I am about to try this one which I found online (at Epicurious) .... I am hoping to maybe make one that is a cranberry nut version too!
Ingredients
3/4 cup all purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup sugar
1/2 teaspoon vanilla extract
2 tablespoons steel-cut oats
1/4 cup semisweet chocolate chips
Preparation
Preheat oven to 350°F. Butter large rimmed baking sheet. Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Add sugar and vanilla; beat until blended. Add flour mixture and beat until moist clumps form. Mix in oats with spatula until evenly distributed (dough will be very firm). Add chocolate chips and knead gently to blend.
Using moistened palms, shape 1 generous tablespoon dough into ball. Place on prepared sheet; flatten to 2-inch round. Repeat with remaining dough, spacing rounds about 2 inches apart.
Bake cookies until center is slightly firm and top is cracked, about 14 minutes. Cool on sheet.0 -

I am curious, do you cook the oats first or leave them dry? I was thinking dry they would either still be hard when the cookie was done, or take forever to cook!0 -
I do not cook them first.They cook to a degree, but taste more like a sliced nut than anything else. I just find that when I used quick oats that they cooked and turned the cookies into a gummy mess. Old fashioned keep their shape and texture which I prefer.0

These cookies turned out delicious!! Although... the oatmeal was just sort of "there" and not like an oatmeal cookie at all, just a chocolate cookie. I intend to make them again, but double the oats!0
