Plants absorb nutrients from the soil in which they grow. Celery, among many other plants, draw the sodium from the soil.

It is a stem, leaves are on the top if you buy a full head, fine roots on the bulbous bottom if you pull it from the ground. It doesn't have 'so much' sodium, unless you have completely different celery in the US to us in the UK - one supermarket here is listing 60mg per 100g or 0.06%. And like all plants it is a good source of potassium which opposes the action of sodium in the body. We need a little of the mineral sodium for health, that should ideally come from produce and oily fish.

This^^ We NEED sodium to live. it is an essential mineral in the body and is therefore available in small amounts in our natural food sources as are all other essential minerals. Celery has a small amount of sodium when you consider a daily intake of about 2000mg, it is a relatively small amount.
