Pick My Produce...Please!

I'm trying to eat healthier and would like to add some variation to my meals. Thought you could help me out with some ideas! :)


Last week I bought spinich instead of my usual romaine lettuce. Didn't know I would become a huge fan of cooked spinich!

A few days ago, I bought sweet potatos for the first time. Slice them up, little bit of olive oil, toss them in the oven= amazingness!!


What should I try next???

    Pick by colour group - do you eat enough dark green veggies or enough blue/ purple produce? It's difficult to make suggestions when we don't know what else you have already tried.

    Squashes and pumpkins!! Roasted, mashed, stuffed, or in a risotto :)

    Green beans sauteed in with some slivered onion, chicken stock and a couple slices of bacon with some black pepper.

    Collard greens sauteed with some chicken stock, red pepper flakes, pinch of sea salt and black pepper to taste

    Zucchini and yellow squash sliced into medium thick rounds, slivered onion, slivered red bell pepper, sea salt, pepper and a couple splashes of chicken stock - stir fry the veggies until semi-soft, pour in the chicken stock and put the lid on. Cook on medium until desired softness.

    Baked sweet potato with cinnamon and butter

    If you liked the spinach, then Swiss Chard prepared the same way as the spinach.

    Thank you all for the good ideas! I've got quiet the choices to make next time I go shopping...might try a few of these :)

    Have you tried baking beets? Totally different than salad bar beets. I pick them, wash them off, drizzle oil over them, then put them in a roasting pan (dish with lid). Usually bake at 350f for 45 minutes - 1 hour. Just make sure a knife will stick easily to the center. When you pull them out of the oven, let them cool until you can bear to touch them and pull the skin right off. If the skin doesn't want to give run it under cold water for just a few second and pull. If that doesn't work then just cut them in to halves or quarter and take it off as you eat it. You can eat them but they are generally just tougher than I like.

    I love turnip greens too, but generally you have to grow your own to get them since they perish quickly after picking.

    Aubergines (eggplant), blackberries, blackcurrants, prunes, black cherries, red/ purple cabbage.

    Broccoli, Asparagus, Mushrooms, Squash, Artichoke, Papaya, Roma Tomato, Clementines, Avacado, Baby Carrots, Peppers...basically all fresh vegetables are amazing. Squash is really good in the winter. Peppers add great flavor to salad and other dishes IMO

    And parsnips can be mashed like potatoes or prepared like carrots or any other root vegetable (it's best roasted! )

    Try broccoli stir fried with garlic & a little kahlua. It's amazing!!

    fruit: oranges, kiwi, blueberries, strawberries, cantaloupe, prunes, dried apricots, raisins, red grapes

    Have you tried cauliflower? Or broccoli? Try some of that with a little melted cheese.

    Spinach can also be eaten raw (as in a salad) or in a dip (use frozen spinach and make sure all the water's wrung out).

    1 box frozen spinach (thawed and thoroughly dry)
    1 container sour cream
    1 round loaf bread

    Slice top off bread loaf and save for the lid. Hollow out the bread loaf so that it resembles a bowl (save the bread chunks for dipping). Blend spinach and sour cream until blended, season as desired. Spoon mixture into bread bowl and cover with lid. Serve with bread chunks and veggies.
