Do you like greens? try this!
I just made a fantastic pot of greens. Very simple and delicious. In a large stock pot put in 2 tbsp of olive oil and heat on med. add 1/2 thin sliced onion and carmelized. Add 2T. water to pot, cover and cook on low until onion is reduced. Add 1/4 t. salt, 1 -32oz. container of veggie stock and as many different kinds of greens as you like and will fit into the pot at once. I used 4 cups fresh spinach, 2 large kale leaves, 3 chard leaves, 12 cups chopped mustard greens and a handful of watercress leaves (chop large leaves before adding to pot.) Cook on med. until greatly reduced and greens are tender. I served them over brown rice. It was filling, warm and yummy! Even my kids liked it which surprised me. Very healthy and loaded with nutrition. Try and see for yourself!

yummy. this is close to how my mom and grandmom made greens, only they'd also put in turkey as well for protein.
the only thing i hate is that i can single handedly eat 3 pounds of greens in 1 meal like this since they reduce down to nothing :laugh:0 -
A little bacon, too, would make this even more yummalicious. I may actually make this for dinner tonight!0
