Ive seen these elsewhere on the forum, but I wanted to re-post. They are pretty good.

New simple recipe for everyone to try, GOOD FOR YOU PANCAKES.

1 Banana, Mashed
1 egg
2 Egg Yolks
1 Tbs Flax Seed Meal (optional, but it’s good for you, so why not)
2 Tbs Chocolate Chips (optional, but so delicious)

Mash up the banana, add the eggs and flax meal, mix well. Make like normal pancakes. Yields about 3 pancakes if you use a ¼C to drop them on the skillet. They are pretty sweet, so syrup isn’t necessary, just a little cinnamon.

The Numbers (w/ Flax Meal)
Calories– 246, Carbs – 28g, Protein – 17g, Fat – 7g.

That sounds good. I would love to try these with protein powder instead of the chocolate chips.

One question: On the eggs, do you mean yolk or white? Seems odd removing the white, whne thats the bit that contains all the protein.

The yolk contains almost half the protein, but the yolks have all the win on nutrients.

    True.

I didn't really word my question that well, I realise the yolk has about 40% of the protein, just the white is almost entirely protein, so if you were going for a high protein recipe, you might ditch the yolk to remove the fats, fatty acids, cholesterol and other bits (some good, some not so great), but the other way round just seems odd to me. Given that the white is almost entirely protein, seems odd to remove it.

Just my thoughts anyway, hence why I asked my question, even if my explanation for asking wasn't entirely clear.

Gotcha, I have to agree, if someone is posting a protein is good for you pancake, why take out protein, unless it's too much protein, which doesn't make much sense. Most of the protein pancakes I'm familiar with use protein powder, whole eggs would be the bonus. Fat in a pancake is not a bad thing in my books, especially coming from eggs.

this was my thought too. That recipe might yield you something sweet and flat, but it will not be a pancake.

Agreed, in fact most of my versions involve some peanut butter as well as the above.

I made a typo, I meant to write 2 egg whites. I personally don't like the cholesterol or fat the yolks provide. But most of the recipes that are similar use the whole eggs. Personal preference.

I made them this morning with chocolate chips because I was craving something sweet. The chips hit the spot, but protein powder would be awesome in these as well.

I was skeptical at first as well. But then I tried them. They are more pancake like than omelet.
