Finding Balance

I started the day after Thanksgiving and am loving myfitnesspal. It holds me accountable and shows me how much I have been overeating for years.
I lost about 9 pounds the first 3 weeks as I know a portion is water etc..
I am trying to find that balance. I have been stalled for a bit and recording everything religiously.
I might have been too aggressive. I am 6'2 281. My calorie per day net is about 1900. I was always under my goals but maybe too far under. For as big as I am I have always been athletic. I have been at the gym and burn about 550 calories in 40 minutes on the elliptical but still eating around 1200-1400 calories with about 800-1100 calories leftover. I felt completely satisfied. I always ate over 1200 calories
I guess my question is the balance. Should I try to eat all of my calories? They are already netted for 2 pounds per week.
If I exercise should I try to eat all of those?
