Need Help with Food

I am trying to eat more and eat healthy, I am building myself up to 1200/ a day I was only eating once a day, I just don't get hungry, I know thats bad for you and I am working on it.

My problem is coming up with healthy things to eat. My hubby doesn't like chicken, I don't like seafood of any kind (canned tuna is ok I guess) We have a small budget. And I really feel like I'm stuffing myself trying to get to 1200...... I am a stay at home mom/wife so the only meal we all eat together is dinner, the rest of the day its just me. and I have no ideas what to eat during the day...

Also I am doing jillian michaels 30ds 5 days a week and I only drink water, about 4-5 cups a day


any advice is welcome and I KNOW I am not eating enough. I am working on it.

    Try some vegetarian meals like for a salad add beans instead of meat. Soups, chili, ect

    I would drink more water......try to build up the calories by having protein shakes with milk, would be 140 calories a scoop of the protein powder and 85 calories for 8oz of skim milk, it would give your body vitamins you needs and help with recovering your muscles. I also make smoothies in the morning, 1 banana, 1/2 cup of frozen fruit, 1/2 cup low fat yogurt, 1/2 cup milk, and a cup of raw baby spinach. It's under 300 calories but full of great stuff for your body and is all cheap. Raw nuts are always good, avocados, salads with any type of grilled meat. My boyfriend and I spend $200 on meat every 1.5-2months and inbetween $100-$150 a month on everything else, so it can be done. Need any advice feel free to ask. I also make a lot of stuff off skinnytaste.com and freeze the extras for other nights

    I have those Special K protein drinks, although not sure how good they work, they taste good though

    If it's just you during the day maybe get some chicken for yourself, cut it up into single servings, freeze the left over, (or get pre cut) and eat that during the day. Otherwise deli meat is a good option, you can eat it plain or put it on a slice of bread or 2 to make a sandwich.. Soups, there's plenty of simple ones but if you make your own you can freeze a few single serving tupperware bowls with it for a quick fix.. (I find tomato-based to be easy to eat, even if not hungry) .. and if you're really looking to add calories, you can always try protein shakes. They fill you up but if you use the right amount of protein it can be like 400 cals for 1 shake. Same goes for veggie smoothies with yogurt or frozen bananas..

    I find hard-boiled eggs are an easy way to grab some quick protein during the day.

    For dinners, lean beef tends to be expensive, but you can get regular ground beef, drain the fat, and then rinse in hot water to make it even leaner. Then it's good in tacos or pasta dishes.
  • I find pre-planning my meals help. If its written down, I know what to eat, rather than just staring at the fridge. If you want chicken, have it. Just cook hubby steak or something he wants( or he can cook it himself ;-) ) I'm not into seafood, but like tin tuna and found a fish that I like, I stick to them. I also cook enough at dinner, to have for lunch the next day. Makes it easier.

    Train yourself to appreciate a wider variety of healthy foods, seafood does not taste the same in every recipe nor does a prawn taste anything like a whole mackerel nor does it have a similar texture. I gagged the first time I cracked open a can of salmon as an adult, now I absolutely adore trout, like fresh cod, canned tuna, salmon, pilchards and mackerel in certain recipes, some fish I still don't like and that is fine. I forced myself to change my attitude because I got sick, don't make that mistake.

    I find that a portion of muesli with fruit and full-fat milk or yoghurt with/without an egg in the morning adds quite a lot of calories, takes no time to prepare and fills you up for most of the day.

    Red beans and rice, lentil loaf (with cheese) and nut roast are all tasty meatless things to cook that don't take much time and everyone invariably loves. A great Indonesian dish is crispy fried/baked tofu with a salad and peanut sauce.
