finding that happy medium?

Ive had a new job since October that is incredibly labor intensive. I do vigorous physical labor for 7 or 8 hours 4 days per week, and since starting the job I have been ravenously hungry, and eating a ton more.
I HATE THIS. I feel like I have gained weight, and not rock-hard muscle, though I have not weighed. I am afraid to. It would seem that although I burn tons of calories per day, and most of the foods I eat are very healthy, I am purely eating too much and still need to count calories. I am hoping to loose about 15 pounds to get back to where I was at the beginning of the year.
ANY ADVICE?
I'm gonna aim for no more than 1800 on work days and 1200 on weekends.

    You haven't even weighed yourself yet. I don't understand this. How do you know you are eating too much? Don't do anything rash until you weigh and do your numbers. It may not be what you think!

    when u work out u burn a lot of calories so I don't understand your dilemma. I mean geez, that is a lot of calories to consume if u are gaining.
