    It's super simple - the most difficult part is chopping all of the veggies. :) For this batch I used:

    half of an onion, cut into larger chunks
    about 12 cloves of garlic, peeled and sliced in half
    1 very large zucchini, cubed (could use an eggplant, yellow squash... whatever you like)
    1 package of sliced mushrooms
    1 bell pepper, sliced
    1 tablespoon of olive oil
    1/2 teaspoon herbs de provence
    salt to taste

    just throw it all together with your fingers and spread onto a parchment paper lined cookie sheet (or silpat mat, tin foil can get sticky by the end but it can work if it's all you've got). roasted for about 45 minutes at 425f, stirring halfway through.

    Indeed, but very difficult (if not impossible) to accurately count calories (not to mention macros) from this stuff.

    Cookie recipe

    1 med banana
    6 table spoons of natural peanut butter
    1 egg
    6 teaspoons stevia ( to taste)
    choc chip to put on top

    I made mine into 10 cookies

    cals per cookie 128 carbs 7 fat 9 protein 5 fiber 1 sugar 3

    everyone's will be different depending on brands etc etc etc
