Greek Burgers with cucumber sauce

Sorry, I don't have the cal count :smile:

I lb ground turkey breast meat
1/4 cup egg beaters, or 2 egg whites
1/2 breadcrumbs (reg or whole wheat)
1-2 oz low fat or fat free feta ( i use trader joes LF feta)
1 tbsp whole grain mustard or dijon mustard
1/4 red bell pepper, seeded and diced
1/3 cup diced onion
1 clove garlic
1/4 tsp cumin
1/2 tsp dried oregano
S and P to taste
A couple handfuls of fresh baby spinach (or frozen if you like)

Cucumber Sauce

1 6 oz container of plain FF yogurt
1/2 cucumber, seeded and diced
1 tsp fresh chopped garlic
1/4 tsp pepper
1 tbsp worstichire (holy sp) sauce
1/4 cup FF feta/or LF feta
a couple tbsp fresh parsley (may omit)
Salt to taste

To make burgers:

Saute peppers, onion, and garlic in cooking spray or trivial amt of oil. I add a small amt of salt to sweat the onions. When soft, add pepper, oregano and fresh spinach. Cook until spinach is wilted. Cool.

Place ground turkey in a large bowl. Add cooled mixture, egg, breadcrumbs, cumin, feta, and mustard. Combine with hands, and you may add more breadcrumbs to further bind meat mixture. Shape into patties and put in fridge for 1 hour or so (if not, they will fall apart when cooked). Place on grill, or pan and cook thoroughly.

Sauce:
Combine all ingredients, then refrigerate.

To make burgers, I place one patty on low cal hamburger bun, with 1 tbsp hummus, sliced tomato and fresh spinach leaves. I top the burger with cucumber sauce. YUM!!!!!!!!!!!

I am not a super carb counter, so I slice 2 yukon gold potatoes ( one for me, one for my hubby) into wedges and roast with salt, pepper and granulated garlic, and serve on the side......
