Stuffed pepper soup

Stuffed Pepper Soup Recipe:

Slow Cooker Stuffed Pepper Soup

1 lb. ground turkey, 93% lean/7% fat
1 cup chopped onion
1 tsp minced garlic
28 oz. can diced tomatoes with juice
6 oz. can tomato paste
4 cups low sodium chicken broth
3 cups chopped green pepper
3/4 cups uncooked brown rice
2 Tbsp. packed brown sugar
1 tsp. dried basil
1/4 tsp. cinnamon
ground pepper to taste.

In a large skillet, cook turkey, onion, and garlic over medium heat until browned.
Drain any juices and transfer mixture to a slow cooker.
Add remaining ingredients and stir gently to mix.
Cook on low for 8 to 9 hours. Add water to thin if necessary.

I made just a few changes. I used 2 pounds of lean turkey breast because we love meat and I wanted to up the protein a little bit. I omitted the sugar for 1 packet of Splenda. We also like a little 'zing' so I added some Frank's hot sauce.
I LOVE how it turned out. I will be making big batches of this to keep for sure! Hope you enjoy!!
