OK OK. I love fresh veggies but in the winter, they sucka nd they are way too expensive.

Can someone help me? I am a veggie nut. Grilled, steamed, sauteed, you name it, I love veggies.

What is the best way to buy when fresh is out of season or too high??

Canned has a lot of crap added, what about frozen?

I agree...fresh is the best. But, second best is frozen. Canned has a lot of sodium. And some have added oils for preservation.

I have a garden every year and I freeze everything, even the pickles I make. And they taste just as good as the day they came out of the garden. I don't grow my own sweet corn, but buy it at the stands in the summer and freeze it still on the cob, what a treat in the winter. Good thing about growing and cooking your own veg. is you know there are no preservatives or salt. the only thing I put salt in is my pickles and its very little. Same goes for the fruit in season. :drinker: I would say until you can cook and freeze your own, check out the frozen section in the store.

Frozen is equivalent to fresh as far as nutrients are concerned. BTW.. great job on being a veggie fanatic....no way I could ever do that! BLAH:tongue:

Frozen veggies are the way to go even over fresh sometimes. There have been studies showing that frozen veggies are frozen at the point they are full of nutrients, thereby retaining those nutrients. But sometimes fresh veggies sit for awhile, then sit on a truck, then sit on the shelf and that can cause loss of nutrients.

It probably all depends on the study though. So, either way, choosing frozen or fresh is a much better choice over canned which can be high in sodium.

I read somewhere that if you absolutely have to use canned veggies, you need to rinse them in water really well and it cuts down on the sodium by almost 40%. I'm not sure how true that it, but it makes sense to rinse off all that oil or whatever preservatives they are canned in....

    FROZEN--I agree.

When it comes to food expense, this is where I splurge, fresh veggies. I just buy what's available for the least amount of money. When tomatoes are $2.99 a pound, forget it. We eat the salad with carrots and red cabbage for color. The only thing I really prefer canned is green beans because when I started cooking them fresh, I added butter and bacon, and I can't get over them that way. So canned it is.

Asparagus is pretty cheap right now. I love to sautee it with thin sliced onions and minced garlic, alittle bit of salt and pepper and 2 tsp of EVOO. I hate those big fat stalks where you get like 8-10 in a bundle. I like the skinnier ones, like 40 in a bundle. More stalks means more tips MMMMMMMM:love:

Canned asparagus is the most repulsive thing ive ever eaten!!!
