Vegetarians/Vegans with high calorie goals--How?

I'm not one, but I have a few friends on my FL who are vegetarians and vegans who are struggling to meet their higher-than-typical calorie goals (2000+ a day) and could really use advice that involves alternatives to shoveling peanut butter into your mouth by the spoonful. Any suggestions? Everything they eat is naturally low in calorie and when your goal isn't weight loss that tends to work against you.

    I am a vegetarian in the process of going vegan. I am also trying to lose weight and I have trouble meeting 1400 calories a day because I get so full from all the veggies and such but if I don't eat enough my body won't let me lose weight. I find that eating breads, nuts, oatmeal, and cereals, are all helpful in increasing calories.     Most dried pasta is vegan. Tofu, also vegan and relatively higher in calories than lettuce. Avocados, nuts, dairy, (for non-vegans,) bread.

    Oh, and oreos are vegan... :laugh:
