Gluten-Free Tips/Recipes/Lists

So my husband was diagnosed with IBS about a year ago and put on pills. They did not help. He does not believe in seeing doctors because they overlook everything and do not test for things. So anyhow, I just ran across gluten-free diets and why people are on them - usually celiac disease. I then began to read about the disease and feel like my husband has all the major symptoms. When I read these off to him, he also agreed. We decided instead of getting him checked out at the doctor (since he wouldn't listen anyway), that we will try this Gluten-free diet for 2 or so weeks to see if his symptoms clear up. Since I am the best wife ever - I am also doing the diet with him because of moral support, plus it might make me feel better as well (I do not have most of these symptoms) Anyhow, what I'm asking from you guys is - can anyone give me any resources regarding foods to avoid or you can have. I have found a few lists and founds a few websites that include recipes and such.
I understand that eggs, fruit, veggies, and most dairy products are good to go. They do make gluten free breads, pasta, and cereals (thank god!)
Can anyone help me out with maybe resources to other lists. Also if you know of any good brands of GF pasta and what not. Also if any one is on this diet, I would appreciate it if we could maybe friends. We are planning on doing this diet after the new years (since we are having friends over at our place and probably won't appreciate gluten free food). Like I mentioned - this isn't a fad diet for us, it's because of his medical issues and I'm only doing it for moral support. I really appreciate this, thanks!

Hi! I have no brands or recipes however if you search Google you will come up with a lot of stuff.
My sister has celiacs and I highly suggest that you urge your husband to go to a doctor to get checked out because if he has the disease it makes it very difficult for his body to ingest nutrients and therefore he will need to supplement and blood work will help guide him as far as how much more he needs to supplement. Also you need to be aware of hidden gluten in products. Carmel color has gluten in it so be very aware of that. Also when he goes out to restaurants he's going to have to ask how the food is prepared. For example if he wants french fries and they are fried in the same batter that they fry breaded chicken in he will have to forgo the fries because even just the gluten from the bread will affect him.
Celiacs isn't something to play around with. I completely understand why you're going to try the gluten free diet but please do your research and find out everything you can about the disease, what products have hidden gluten in them, what "additives" have gluten etc. and make sure he does go to a doctor to get checked out to rule out anything else, like ulcerative colitis or even crohn's disease, both of which can develop from Celiacs.0 -
Check out the website www.helpforibs.com I have gotten a ton of relief from the advice I read on the web site. Specifically, within 1 week of starting to use the Acacia powder they advise and sell, my constant diarrhea was gone and as I continued to use it, all my issues went away. I am a firm believer in the Acacia powder but additionally following the specifics of safe/non-safe foods that are listed on the web site. Tons of info there. The peppermint tea helped me a lot also. When I was originally diagnosed, my Dr. said to go on a low fat diet. That was not even the half of what I needed to do but once I found the specifics and started following them, WOW!! Such relief!! Good luck to you and your husband. It's not a fun experience.
I will also say that once things start to settle down, it's ok to slowly start re-introducing different foods back into your diet. Just watch for the messages your body sends you. Great cookbook available there too.0 -
This website has a lot of good recipes. It isn't a 'gluten-free' site, but it turns out that nothing has gluten in it. www.detoxinista.com I've made a few of the grain-free baking recipes and the paleo pancakes. all were really good!0

read Robb Wolfs book the Paleo Diet... and check out marksdailyapple.com..... good resources for those who are trying to remove gluten from their diet.0
