If I am not going over my calories, but somedays going over on other things like carbs, sugar, fat, ect is that going to prevent me from losing as much weight?

I agree with Cdavis, they all work together. I find that if I just look at my protien, fat and carbs during the day I never go over on calories.0

Yes, but I adjusted my proteins, carbs, etc. 40% of my calories are from protein. Going over on protein is OK. You should eat half your body weight in grams of protein.
It's the carbs, fat, sugars and sodium that you need to really watch.
But, things like olive oil, avocado, nuts, etc (in moderation) are good fat and may send you over. But those are the fats that help you burn fat. So you should incorporate them into your diet. That doesn't mean eat 6 avocados and 3 cups of almonds... but add a couple avocado slices to your salad or egg white omlette and chop up 5 or 6 RAW almonds and sprinkle them on to your low fat cottage cheese.0
