Hi,
Just wondering what healthy foods you guys are planning to have for NYE?

    Stuffed Portobello Mushrooms. Yumm-o. Can't wait.

    This recipe is for 1 mushroom, but I never make just 1. Multiply out the ingredients for as many portions as you need.

    1 large portobello mushroom cap (stem removed)
    1/2 tsp. chopped garlic (or to taste)
    1/2 cup of frozen spinach (thawed and drained)
    1/2 ounce of feta cheese (crumbled)
    salt & black pepper to taste (watch salt because of feta)

    Coat a non-stick pan with either olive oil cooking spray or olive oil from a mister.
    For each mushroom cap, sautee garlic. Then add spinach and continue to sautee for a few minutes longer. Remove from heat and cool. When cool, add the feta cheese and black pepper. Stir to combine.
    Fill each mushroom cap and bake at 375 until done. Each mushroom has only 115 calories and is very filling.

    (If serving along many other sides, you might considering cutting in them in half)
