Hi all,
I got a slow cooker for christmas (rock and roll!) and am looking for good, cheap, healthy meals I can do in it. I've currently got a pork goulash on the go (my house smells amazing!) but wondering what else I can do in it.... any recipes welcome! :-)

Google " Weight Watchers Crock Pot Lasagna."-there are several versions. The WW version makes 6 huge servings and does not include any extra veggies, but I find that you can get eight good-sized servings if you add (sauteed in PAM and drained !)zucchini, onions, and carrot shreds to the cheese mixture. The original recipe uses extra lean beef and low fat cheeses, but you can cut down on fat content by substituting fat free ricotta, amd the results are still pretty good. I have been wanting to try this with ground turkey....I can't see why it wouldn't work, but it might not taste as much like "real" lasagna.
1 lb lean ground beef
1 onion, chopped
1 garlic clove, minced
1 (28 ounce) can tomatoes, crushed
1 (15 ounce) can tomato sauce
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 cup part-skim ricotta cheese
1 1/2 cups lowfat mozzarella cheese, shredded (I used WW mozzarella)
6 lasagna noodles
1/2 cup parmesan cheese, shredded
In a large skillet over medium high heat brown beef, onion and garlic, stirring to break up beef (5-10 minutes) until meat is brown.
Stir in next 6 ingredients (tomatoes - red pepper flakes) and simmer another 5 minutes
Meanwhile in a small bowl combine ricotta and 1 cup of the mozzarella (and any cooked veggies you may want to add)
Spoon 1/3 of the tomato/beef mixture into crock pot. Break 3 lasagna noodles in half and arrange on top of tomato/beef mixture and top with half of the ricota mixture. Repeat with second layer. Finish with the remaining 1/3 of the meat mixture.
Cover and cook on low for 4-6 hours.
In a small bowl combine remaining mozzarella and Parmesan cheese. Sprinkle over meat mixture and set aside for 10 minutes or until cheese melts and lasagna is firm (10 minutes or so)

I use my crock pot at least 3 times a week. I am making a chicken in it for tonight!! I found most of my recipes on Pinterest!!

Put a chicken in a pot. (discard the gross stuff in the cavity or save for stock)
Add salt & pepper, do not add liquid. (sometimes I shove butter & garlic under the skin)
Cook on high about 4 hours for 3-4 lb. chicken, or until meat reaches 180 degrees.
Remove the meat from the bones.
Cover the carcass w/ water, add celery, carrots, onion.
Cook on low over night, strain.
Chicken & broth for days.0 -

BUMPING and adding
4 lbs frozen chicken tenders
2 15oz cans diced tomatoes with green chiles
2 packets favorite taco seasoning or fajita seasoning
mix seasoning with canned tomoatoes and pour over frozen chicken tenders in crockpot, cook on high 6 to 8 hours, remove chicken and fork to shredd, use for burritos or chicken soft taco meat. or chicken taco salad0 -
I made this Roast Beef dish in the crock pot on Christmas Eve - it was wonderful!
1 3-4 lb beef roast (any cut will do)
1 pkg Brown Gravy mix
1 pkg Ranch Dressing mix
1 pkg Italian Dressing mix
1/2 c water
Mix the dressing mixes together. Place meat in crock pot, sprinkle mixes over top (can sprinkle extra around). Add water to side. Cook on low 9 hrs. As always temp for doneness.
I added potatoes, carrots and pearl onions. Although the meat was a pretty cheap cut, it was "fall-apart" tender and so delicious! I also added some corn starch mixed with water to the juices to make a sauce. This recipe is a little high in sodium. I got a low sodium Brown Gravy mix to cut that back a little. Some people cut down the Italian Dressing or Ranch Dressing to reduce the sodium. Sorry, I did not save the nutrient info, but that would depend on the cut of meat and what you add to the recipe anyways.0 -
Beef stew, pot roast, and chicken with veggies can be done with seasoning packets you would find in the gravy aisle and I've found several that aren't bad in calories, fat, or carbs.
Look at campbells reduced fat cream of whatever soups for recipes that suit your taste. I like chicken and dumplings in the crock pot.
Hormel makes an excellent slow cooker ready boneless pork shoulder roast that you can shred for sandwiches. They are about $5 at walmart but you'll be able to feed a crowd and it doesnt require any other ingredients.
I also like to make something I saw on here. Mix 1 jar salsa with 1 pkg cream cheese (i use the less fat neufchatel kind) put in frozen chicken breasts and cook in crockpot.0 -
I live out of my slow cooker every week, each cook lasts me around 4 days, beef or chicken loads of veg and either curry bolognese or chicken stock for different sauces tonight was beef with horseradish in the gravy .0

I am going to try baking sweet potatoes in mine this week. You wrap the potatoes in foil and place in crock pot of low all day, suppose to be done in about 8 hours.0

I have posted this one many times for a few reasons, it is easy to remember, my kids love it, and the portions are HUGE.
4 chicken breasts
2 tbs. taco seasoning
1 can reduced fat cream of mushroom soup
1 cup salsa
1 cup non fat sour cream
Add ingredients in order listed. cook on low for 8 hours. 7 hours into cooking, shredd chicken return to pot for last hour of cooking. Serve over noodles or rice of choice.0 -

Also I was wondering whether there were many more in detailed recipes? I don't tend to buy ready made dressings or seasonings!0

I love to get a lean pork roast.. add garlic, tomatillos and red pepper flakes.. cook all day till it falls apart and it is awesome in pita's/ tortillas with veggies to top and even some plain greek yogurt in place of sour cream!0
