I altered this recipe from "The Joy of Vegan Baking"
1 1/2 cups unbleached all purpose flour
3 tablespoon ground chia seed
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cups almond milk
1/3 cup vegetable oil
Preheat oven to 475F. Lightly grease cookie sheet.
Mix the dry ingredients together until combined, then add the milk and oil. Stir until moistened. It should be thick and sticky. Drop teaspoonful of batter onto the greased cookie sheet with 1.5" apart. Bake for 8 minutes. Serve hot.
I couldn't stop eating this after I just baked it. Yum... a good way to add chia seed into my regular diet. You can use flaxseed instead.
