Pasta e Fagioli soup (tastes like Olive Garden)
I made this soup tonight and it was sooooo good. About 340 calories for a 2 cup bowl and about 25 grams protein. To keep it low sodium, I used no salt added beans and tomatoes.
Pasta e Fagioli
2 tbsp canola oil
1 lb ground turkey (99% lean)
1 tsp pepper
¼ tsp salt
6 ounces shredded carrots
1 yellow onion , chopped
4 small stalks celery , diced
2 cloves garlic, minced
14.5 ounces can, diced tomatoes
1 jar Arrabbiata pasta sauce (or 1 jar marinara plus 1 tsp crushed red pepper or to taste)
1 tsp dried oregano
1 can red kidney beans
1 can white kidney beans (cannelini)
6 cups low-sodium beef stock
4 ounces small dried pasta (shells or ditalini)
1 tablespoons fresh parsley , chopped
Directions:
Brown turkey in oil in Dutch oven or stockpot, season with salt and pepper.
Add onion, garlic, carrots, celery, tomatoes, oregano and pasta sauce. Simmer for about 10 minutes.
Drain and rinse beans and add to pot along with beef stock.
Simmer until celery and carrots are tender, about 40 minutes.
Add pasta and cook about 15 minutes more until pasta is done.
Garnish with fresh parsley.
Makes 8 2cup servings

The soup itself sounds good but it may not be the best thing to compare it to Olive Garden since Olive Garden is far from the pinnacle of Italian food.0

I appreciate all of the "Olive Garden" comments. The point to that is that the soup at OG is spicy and that is achieved with the Arribbiata sauce. It has always been my favorite soup when I am sick because of the spiciness. It is a really good soup, nevertheless.0

It all sounds delish
I would only change 1 thing to that recipe .
I would boil the pasta separate and then add it to the pot so that you do not end up with the starch that comes from cooking the pasta.
I usually add my pasta as I serve it so that it does not get to soft on me , must be the Italain in me `` I like pasta aldente`` Now You got me craving this !!! LOL I will have to make some over the weekend! )0
